CHICKEN INGREDIENTS:
2 cups Frying Oil
4 Bone-in, Skin-on Chicken Thighs
Pickle juice
2 cups all-purpose flour
2 Tbsp Garlic Powder
2 Tbsp Onion Powder
2-4 Tbsp Cayenne Powder
2 Tbsp Fennel Seeds, ground
2 Tbsp Paprika
Salt
Fresh Cracked Pepper

CHEESE SAUCE INGREDIENTS:
1 cup Cheese Whiz
Whole Milk
1 can Rotel Tomatoes
Salt
Garlic Powder
Cayenne Powder

SANDWICH INGREDIENTS:
Potato Buns
Mayonnaise
Pickles
Shaved Ham
Fried Chicken
Cheese Sauce

COOKING METHOD:
1. In a cast-iron pan, add frying oil and heat to 350F (or bubbling).
2. Remove the bone from the chicken thighs. Add to a large bowl and fully submerge the chicken in pickle juice. Add water, if needed. Refrigerate for 3 hours, or overnight.
3. Combine all the spices in a medium-size bowl and mix together until incorporated.
4. Add the brined chicken to the flour mixture and dredge until fully covered. Place on a wire rack set in a rimmed baking sheet. Cover any wet spots with more flour then let rest for 5-10 minutes.
5. For the cheese sauce, add the cheese whiz and a glug of milk to a large pot set over medium heat.
6. Strain the can of Rotel tomatoes, chop it up finely, add to the cheese and milk mixture, and stir to combine. Add a pinch of salt, garlic powder, and cayenne powder. Stir until fully incorporated and melted. Place it to the side to keep warm.
7. Once the chicken has rested, add additional flour to any wet spots then drop on both sides to knock off any excess flour.
8. Add two chicken thighs at a time to the frying oil and fry for 4-5 minutes on each side while lightly basting each piece. Place on a wire rack set in a rimmed baking sheet and immediately season with salt and pepper. Repeat with remaining chicken thighs.

ASSEMBLY:
1. Toast the potato buns in a medium heat pan.
2. Add mayonnaise and pickles to the bottom.
3. Add the fried chicken thigh on top of the pickles and add a few slices of shaved ham on top.
4. Drizzle cheese over the ham and chicken. Finish with the top bun.
