6 tablespoons butter, divided
1 onion, chopped
8 ounces fresh mushrooms, finely chopped
2 cups Italian Arborio rice
1/2 cup white wine
8 cups chicken broth
pinch of saffron
salt to taste
3/4 cup (3 ounces) freshly grated Parmigiano-Reggiano cheese
