INGREDIENTS:
Pico de gallo salsa:
4 tomatos, chopped
1/2 an onion, diced (use the other half for the filling)
1/3 cup cilantro, finely chopped
Juice of 1 lemon
Salt and pepper to taste

Guacamole:
3 avocados
1/2 cup green onions, chopped
Juice of 1 lemon
Salt to taste

Chimichangas (Makes about 10)
Rotisserie chicken, skin and bones removed, meat shredded
1/2 an onion
1 cup corn
3/4 cup red taco sauce
Tortillas
Refried beans or beans of your preference
Shredded cheese
Vegetable oil for frying
Sour cream, optional
