This simple, put-together pasta salad is bursting with flavour and is packed with nutrients and protein. It's less than 750 calories and only takes 20 minutes to make. Best of all, it's cheap and uses easily accessible ingredients. Please enjoy.

Street Corn Pasta Salad -
Ingredients -
500g (1.1lbs) - Farfalle or Fusilli Pasta
2 Cans (800g) - Corn Kernels, Drained
1 Can (400g) - Black Beans
4 - Spring Onions, Thinly Sliced
1 Bunch - Coriander (Cilantro), Chopped, Stems Included
1 - Jalapeño, Diced, Seeds in or out
2 - Avocados, Chopped
100g (3.5oz) - Mozzarella Cheese
Dressing -
200g (7oz) - Low Fat Mayonnaise or Greek Yogurt
1 tsp (2.5g) - Ground Cumin
1 tsp (2.5g) - Sweet Paprika
1/2 tsp (1.5g) - Red Chilli Powder
2 tsp (10g) - Sriracha Sauce
1 - Lime, Juiced
Seasoning To Taste
Method -
1. In a bowl, add all of the dressing ingredients and mix to combine. Adjust seasoning and acidity. Store in the fridge until ready to serve.
2. Cook pasta as per the packet instructions.
3. Add in the corn and fry in a pan over medium-high heat for 3-4 minutes or until lightly charred. Remove and set aside.
4. Add all the ingredients into a large bowl and mix. Adjust seasoning levels.
5. Portion into 5 x 750ml meal prep containers. Garnish with coriander (cilantro). Dig in.
