34g butter softened
98g sugar (divided 23g for mixing w egg whites)
34g bread flour
6g salt
188g whole milk
135g chocolate
5 egg yolks
Egg whites of 5 eggs

-Mix butter, salt and flour to form paste
-bring milk and 75g sugar to boil
-add flour and butter mixture and cook until thick and gummy about 4 min
-remove from heat and add chocolate, stir until melted
-add in egg yolks and stir
-whip egg whites and 23g sugar until stiff
-fold in egg whites to chocolate
-place in 8oz ramekins that have been buttered and coated in sugar
-bake at 375 for 17-20 min
