INGREDIENTS
4 Lobsters
Eggs
Ginger
Cilantro, chopped
Green Onions
White Pepper
2 Tbsp Black Vinegar
Soy Sauce
2 Tbsp Chili Crisp Sauce
1 Tbsp Sesame Oil
1 Tbsp Fish Sauce
4 Garlic Cloves, crushed
Kosher Salt
1 Cup Basmati Rice
8 Cups Chicken Stock
2 Tbsp unsalted butter

COOKING METHOD:
1. Add rice to a large pot followed by chicken stock. Add crushed garlic cloves and halved ginger. Remove the roots from the green onions and add to the pot. Bring to a boil.
2. In a medium bowl, add grated ginger and garlic. Add in chili crisp, soy sauce, toasted sesame seed oil, black vinegar, and fish sauce. Mix together and top with chopped cilantro and chopped green onions. Mix together.
3. Once the rice begins to break down, remove the green onions. Whisk together until the rice breaks down to the desired consistency.
4. Remove the meat from the lobster and cut it into little pieces.
5. Add unsalted butter to a medium-heat pan, add the eggs, and add the lobster bits to the egg whites.
6. To plate, add the hot congee to a bowl covered with the fried lobster egg and topped with white pepper and chili crips mixture. Enjoy!
