This is Claire Saffitz's recipe for a free form apple tart. It is not made in a cast iron or tart pan but is rather formed on a sheet tray and it takes on a rectangular shape with some help.
I tweaked the recipe a bit, added more salt and seasoned throughout with cinnamon and nutmeg. I also used store bought puff pastry where I believe Claire uses her own recipe.
The filling was delicious and tart but it definitely could've used a sturdier crust which a homemade puff pastry would probably provide. I'm curious about a pie crust even. Also, I might consider caramelizing and browning the raw apple slices on top in a brown butter caramel in the future. I believe they need a little headstart in cooking before they hit the oven.
Overall, Claire Saffitz always provides me with quality dessert recipes. I have made her fruit tart before (and may make a video for it) and it was delicious. Link to her recipe is below!
