Few countries have had an impact on bread like France. Today we look to France just before and after the revolution to get an idea of what bread was like at the end of the Ancien Regime and the beginning of the Industrial Age. For the first part we're making the brioche that we think Marie Antoinette was referring to when she said "qu'ils mangent de la brioche" (Let them eat cake).
In the second part we make the bread that has become an inseparable symbol of the the French Republic, la baguette!
