Gnocchi are one of my favorite seasonal winter dishes to make up on cold days! I made this batch pink with beets because Valentines day is right around the corner (and my little girls love all things pink)! Gnocchi use pantry staples and in season winter produce like root vegetables, winter squash, and tubers to make pillowy soft dumplings! Fried in butter or smothered in sauce, I don't think you can go wrong with Gnocchi! As a bonus, they freeze really well so you can make up a large batch on a day you have extra time, cook some now and toss the rest in the freezer to whip up on a cold day when you don't have the time but still want some good old fashioned, homemade comfort food!
