STUFFED POTATO recipe
Ingredients for stuffed potato:
- Papa canchán
- Potato starch (secret)
- Salt
- Red onion
- Yellow pepper
- Ground beef
- paprika (panca without spicy)
- Pepper
- cumin
- minced garlic
- oil
- vinegar
- 2 eggs
- olive (optional)

Stuffed potato preparation:
Wash the potatoes (with peel), peel the potato and wash again. Add salt and then bring to a boil for 13 minutes, add two eggs to boil along with the potato. Then, remove the water and add 1 1/2 Tbsp. potato starch (chuño) and integrate very well. Press the potato twice. Reserve.
In a frying pan add oil and fry the onion and yellow pepper, then add the paprika. Sauté. Add the ground beef, 1 1/2 of the white vinegar, salt, pepper, cumin, the two chopped eggs and Chinese onion. Reserve.
To assemble the potato, add a necessary amount of potato in the palm of the hand and make a small slit in the center, add the necessary amount of the filling there and then close giving the potato a smooth surface. It is not necessary to pass it through egg or flour.
In a container add the necessary amount of vegetable oil and heat. Check that smoke comes out of the oil and then add the potatoes to fry. Wait for the perfect golden color and remove the potato. The potatoes will not open. Finally serve and optionally accompany with Creole bramble and creams to taste.
