All the history we saw in our Rise of Bread series culminates in this recipe. The standard, hipster-y sourdough loaf. Crispy, airy and with a big guaranteed ear.
In case you missed the ingredients:
355 grams of strong white flour.
70 grams of whole wheat flour (ideally strong too).
275 milliliters/grams of water (hydration will go up a bit from folding with wet hand and spraying on water) + 10 milliliters to dissolve the salt into.
Roughly 130 grams of starter (we used rye but you can use any type)
10 grams of salt.
