Sausage Stuffed Banana Peppers are my GO TO appetizer at our local establishment, so I decided to try it on the smoker... and DANG am I glad that I did! This stuffed banana pepper recipe is super SIMPLE and super DELICIOUS! Lets fire up your pellet grill, smoker, or oven and lets get to cooking!

This is one of the easiest recipes I've got on the channel and it's very easy for you to alter to your personal preferences.

Get yourself some large banana peppers like you see in the video, or you can use sweet or bell peppers if you choose. For this recipe I used 2lb of fresh Italian sausage, 3 cloves of minced garlic, 8oz of softened cream cheese, and season to taste with your favorite bbq rub! After mixing everything thoroughly, stuff the peppers so that the meat is slightly above the top of the pepper (no one wants a half filled pepper!), then place on a wire rack.

Set your pellet grill or smoker (I'm using my Camp Chef Woodwind Pro 36) to 275F and smoke until your sausage is around 155-160F. At this point top with cheese. I chose to used deli sliced provolone and cut it into strips. We want the cheese to melt nicely as well as the meat to reach a minimum of 165F.

To dress it up, you can serve with your favorite tomato sauce, top with Parmesan cheese and fresh chopped parsley!
