Preheat Oven: 350°F/180°C
Baking Time: 40 to 50 minutes 


Greek Lemon Garlic Chicken is fresh, bright, simple and is packed with flavor. It is such a healthy and delicious dish you’re going to want to make all the time! The secret is in the spices and lemon-garlic marinade. Refrigerate or marinate the chicken pieces for 30 minutes to 4 hours is a must, but it can go right in the oven if you don’t have enough time. 


Greek Lemon Garlic Chicken Recipe | Greek Lemon Herb Chicken


Ingredients: 

6-8 chicken thighs, bone in & skin on 


THE MARINADE:

1/3 cup extra-virgin olive oil 
1/4 cup lemon juice, preferably freshly squeezed 
5 garlic cloves, minced 
Zest from 1 lemon
1/2 teaspoon chili pepper flakes 
1 tablespoon dried oregano
2 teaspoon dried thyme 
2 teaspoon Dijon mustard 
2 teaspoon kosher salt 
1 teaspoon ground black pepper 

Lemon slices
Finely chopped fresh parsley, garnish



Directions: 

1. In a small bowl, combine olive oil, lemon juice, garlic, lemon zest, pepper flakes, dried oregano & thyme, Dijon mustard, kosher salt, and black pepper. 
2. In a large bowl, add chicken thighs and pour marinade on top. Toss chicken using your hands or tongs and make sure all pieces are coated. Cover with plastic wrap and refrigerate chicken for 2 hours.
3. After two hours, preheat oven to 350°F/180°C. Place rack right in the middle of oven.
4. Arrange chicken pieces in a baking dish/pan and pour remaining marinade on top. 
5. Bake for 40 to 50 minutes, or until the chicken is fully cooked and registers 175°F/80°C on an instant-read thermometer. Baste the chicken once while it bakes with pan juices. 
6. Broil the chicken pieces on high for 2 to 3 minutes for extra crispy skin and color.
7. Remove from oven and garnish it with lemon slices & finely chopped parsley. 
8. Best serve it with Greek Lemon Herb Rice & Greek Salad. Enjoy!🍋
