When butter melts, the butterfat and the milk solids separate. If you’ve ever made clarified butter or ghee, then you have seen this in action. Because the milk solids are heavier than the fat, they sink down to the bottom of the pan and after some time they begin to brown. As the butter browns, it takes on a whole new flavor profile. It becomes nutty and rich and can be used in virtually any recipe that calls for butter!

- 128 grams (1 stick +1 tablespoon, 9 tablespoons) brown butter, cooled and resolidified
-150 grams (3/4 cup) brown sugar
-1large egg
-1 tsp vanilla extract
-1/4 tsp salt
-150 grams (1 1/4 cup) all-purpose flour, lightly spooned into measuring cup & leveled off, being careful not to pack down when measuring
1 cup chocolate chips (any kind your prefer or have on hand)
