Beef cheeks are one of my absolute favorite dishes. Braised dishes, in general, are the epitome of comfort food. If you've mastered braising beef cheeks, you can braise practically anything until the meat is so tender you can cut it with a spoon.
After watching this video, you can braise almost anything and create delicious dishes.
1.2 kg beef cheeks / ox cheeks / veal cheeks
2 onions
300 g celery
200 g carrots
200 g celery stalks
200 g leeks
1 tbsp tomato paste
750 ml red wine
750 ml beef broth
2 bay leaves
12 peppercorns
20 coriander seeds
400 g celery
150 ml milk
Nutmeg, pepper, salt
