Feeling lazy and hungry at the same time? Then I have some recipe ideas for you! 5-6 cozy, simple to make and fairly healthy / nutritious meals to get you through the gloomy wintertime. Wholesome meals that are 100% vegan ofc.

INGREDIENTS + NOTES

#1 Cheesy Kimchi Tacos 0:25

150g - 200g firm tofu (5.3oz - 7oz)
1 tbsp flour
a little veg oil for pan
2 - 3 tbsp vegan kimchi
1 tbsp soy sauce
¾ tsp rice syrup / agave / maple syrup
2 handfuls baby spinach
2-3 tbsp vegan pizza cheese

also: 3-4 small tortillas of choice (or 2 bigger ones)
OR: serve with 1-2 servings cooked rice

→ serves 1 as a meal, 2 as a snack


#2 Lazy Potato Bake 1:56

~ 6 small potatoes, cut into THIN slices (~260g = 9oz)
6-8 tbsp rinsed brown lentils
enough seasoned tomato sauce to cover the lentils
6-8 tsp vegan cream cheese/sour cream/hummus
sprinkle seasonings of choice (salt, pepper, dried herbs for example)
drizzle of olive oil
fresh spinach for serving
fresh bread for serving

→ yields 2 bowls (around … cm in diameter)
→ bake until potatoes are TENDER, depending on the size and shape of your bowl (or on your oven) times may vary! But at around 40 min at 180C / 350F.


#3 Baked Tofu “Steaks” 3:22

200g firm tofu (7oz), cut in half lengthwise
a drizzle of olive oil
a drizzle of balsamic vinegar
a drizzle of ketchup
a drizzle of soy sauce
a drizzle of Worcestershire sauce, vegan
a drizzle of sesame oil (optional)

serve with:
roasted potatoes/roasted veggies/spring onion/fresh herbs/hummus/vg cream cheese etc

→ in order to protect your dishware, line it with parchment paper (i didn’t do that and so I had to do bit of scrubbinG)
→ serves 1


#3.5 Lazy Tofu Avo Wraps 4:40

1 Baked Tofu “Steak” (check recipe #3)
2 warmed tortillas
1 avocado, mashed
seasoned salt
sesame seeds, sriracha (mayo)

PLUS steamed broccoli, side salad etc
→ serves 1

#4 Gochujang Mac & Cheese 5:22

1 tbsp vegan butter
1 tbsp flour
a little over 1 cup pasta of choice (~100g)
¾ cup (180ml) unsweetened oat or soy milk
1 tsp miso paste
¾ tsp gochujang (or to taste)
1 tsp white wine vinegar (or to taste)
1-2 handfuls vegan pizza cheese
2-3 handfuls fresh spinach
sesame seeds for serving

→ serves 1


#5 Sesame Seaweed Noodles 6:51

important note: after filming I tweaked this recipe SLIGHTLY and found a better way of assembling this bowl.
1. Mix 1 tbsp of the sesame sauce with your serving of noodles/edamame.
2. Add your other bowl add-ins (crispy tofu, cucumber, sea weed bits)
3. drizzle some of the remaining sauce on top, add remaining toppings
(this way the noodles don't soak up all the sauce at once. Anyway...)

for the sauce:
2 ½ tbsp white tahini (the less bitter kind)
1 ¼ tbsp balsamic vinegar, lemon juice or white wine vinegar
1 tbsp soy sauce
1 tsp agave or maple syrup (or to taste, up to 2 tsp)
2-3 tbsp orange juice (or water)

optional:
2 cloves garlic, minced and sautéed for 2-3 min in a little olive oil
1/4 tsp orange zest
salt, pepper to taste

SERVE WITH
1 serving rice/soba noodles (~70g)
chopped cucumber, 2 handfuls edamame
100g-150g pan fried tempeh or crispy tofu (check recipe #1 for how to cook said tofu)
roasted seasoned seaweed strips (from asian supermarket)
sesame, spring onion, additional soy sauce, salt, pepper etc
