4 Chicken whole legs or 1.5 kg
5-6 Tbsp Cane Vinegar
2 Tsp brown sugar
4 Tbsp dark soy
4 Tbsp light soy
10 Cloves garlic - chopped
5 Bay leaves
12 Black peppercorns - whole
400ml water
2 Green onions, garnish
Begin by cutting your chicken legs in half.
Next, add your chicken to the bowl, add the vinegar, sugar, dark soy sauce, light soy sauce, minced garlic, peppercorns and bay leaves.
Allow it to marinate for 1 hour to overnight. The longer the better.
After marinating, remove the chicken legs from the marinade. Then, in a large heavy-based pot, (a Dutch oven). sear the chicken until it achieves a desirable colour, be careful not to burn.
Once the chicken is nicely browned, add the reserved marinade and water to the pot. Bring the mixture to a boil and then put on a simmer, and let it cook for about 30 mins or until the chicken is tender.
Remove the chicken from the pot and allow the sauce to reduce by half, if not at the desired thickness, make a slurry of cornstarch and water. Add to the sauce on low heat to develop a sticky consistency.
Add the chicken back into the sauce, cut the green onions on the bias and serve with rice.
