►Ingredients For the Chicken Burger

►For the Sauce

60g or 3 Mild red chilies
2 garlic cloves
Zest of whole lemon
1 tbsp fresh lemon juice
1 tsp chicken seasoning
1/4 tsp MSG
1/2 tsp smoked paprika
1/4 tsp white pepper
1/2 tsp black pepper
Salt to taste
1/2 tsp coriander seeds
1/3 cup hot sauce
1 cup or 240ml chicken stock
1 tbsp corn flour mixed in some water

►Chicken Prep

Chicken breast or thigh (700g or 1.5lb)
Slice breast in the middle
3 tbsp spicy sauce
1/2 tsp salt
1/2 tsp black pepper

►For the Dredge

2 cups (240g) plain flour
1 tbsp chicken seasoning
1 tbsp red chili
1 tsp black pepper
1 tsp white pepper
1 tbsp mixed herbs
1 tsp salt

Water in a bowl
1 litre oil for frying

►Fries

3 - 4 large size Russet or Maris piper potatoes
Cut and soak in water then wash/dry
Season to taste

► For the Coleslaw (Make this first)

350g or 1/2 white cabbage (mix 1 tsp salt and leave it for an hour)
2 small carrots
1/2 red onion (soak in cold water)
Wash everything and drain
1/2 cup mayonnaise
1 tbsp double or heavy cream (optional)
1/4 tsp white and back pepper
1/4 tsp korean red pepper flakes (optional)
1 tsp parsley
1/4 tsp garlic
1 - 2 tsp white or brown sugar
1 tbsp white vinegar or to taste

►For Assembling the Chicken Burger

Burger buns
Mayonnaise
Lettuce
Sauce as required
Cheese
