Today I’m going to share with you how to make the perfect mexican breakfast, migas ala mexicana with a mega salsa molcajete, let me tell you this is seriously everything you want in a breakfast. Growing up this is what my mom would make us, we would never get tired of it because she would make it different every time! Tip! You can use regular chorizo but I just love sausage chorizo a lot better because its not so overpowering in taste!!!

Ingredients: 6-7 servings
10 corn tortillas
10-12 eggs
8 oz chorizo sausage
1 roma tomato
1/4 white onion
1/4 red bell pepper
1 chiles serrano or jalapeño
Mexican blend cheese
salt & black pepper
Salsa
2 roasted tomatoes
1 jalapeño or serrano
1 garlic clove
1/4 red bell pepper
Salt
