Ingredients
Oil for frying
12 Flour Tortillas
10 Chicken tenders
1 roasted and peeled poblano pepper
1/2 roasted and peeled red bell pepper
1/2 cup of black beans
1/2 cup of corn
1/3 cup cooked and finely chopped spinach
2 Tbs heavy whipping cream (half and half or milk)
1 Tsp ground cumin
1 Tsp garlic powder
1 Tsp onion powder
1 Tsp chicken bouillon or 1/2 Tsp salt
1/2 Tsp black pepper
1/2 Tsp smoked paprika

Tortilla glue
1 egg
1 Tbs flour
Water

Avocado Chipotle Ranch Sauce
1/2 cup buttermilk ranch
1/2 cup Chipotle cream sauce
1 Avocado
Lemon or lime to taste

Southwestern Chipotle Cream Sauce
1 cup mayonnaise
1/4 cup of crema fresca (half and half or heavy whipping cream works well too)
1/4 cup chipotle adobo sauce + desired chipotle pods
1 Tsp ground cumin
1/2 Tsp smoked paprika
1/2 Tsp garlic powder
1/2 Tsp onion powder
1/4 Tsp chicken bouillon
A splash of lime
