Steak is easily my favorite food bar none, but that doesn’t mean just beef! I love cooking Bison, and this was my first Bison Ribeye and I figured I’d share a few key differences in Beef and Bison for those who are interested in trying it for the first time!

Beef and Bison are very similar at the core! the biggest difference overall is the color. Beef, even though it does have the stronger flavor as well as more fat, is actually much lighter in color than Bison. Due to the high Iron content in Bison, it tends to have a rich/ deep red color that is often associated with game meat like Venison and Elk. don’t let the color fool you, it’s far from gamey!

Bison has a slightly sweet and rich flavor, and really is complimented well by the @cusocuts Dirt Seasoning blend I used on it! When cooked to a perfect medium rare and seared off to have a great crust, you really would be hard pressed to find a better bite of food if you love steak!
