Note: I have altered his method a bit. I only use 18 grams of salt. I allow it to double on the countertop in a covered container, then I put it in a banneton (lined with a floured tea towel) covered by a cheap shower cap, and let it rest over night. Then I bake it as Ben suggests. This is EASY and I haven't had a single failure.

Note: I don't use the golden syrup. I do add both brown and white sugar. I add chocolate chips and then sprinkle the top with sanding sugar (large crystal sugar that doesn't melt while it's baking.) Allow it to bake until the internal temperature is 200-205°F. You'll have perfect results. If you grease and flour the tin before you add the batter, the banana bread will come out of the pan perfectly each time. (You only have to wait a few minutes before removing it from the pan.)

**If you are afraid of making sourdough baked goods because you think it's hard to do, let me tell you that it's NOT - if you know how. Almost everything you see on YouTube and the internet makes it look so hard and complicated. I can't manage complicated, so I found some ways (by researching) to make it EASY without taking much time.
