Caviar is priced based on two criteria: desirability and scarcity. There’s plenty of relatively affordable caviar from fish like herring, which costs about $7 per ounce. The caviar from an albino ossetra sturgeon, costs $450 for one ounce, or $7,300 for just over one pound. Sturgeon are a prehistoric fish that can live to be over 100 years old, grow to 28 feet in length and weigh more than 4,500 pounds.
