This is one of my recipes from years ago ( at least 12 ). I know the Miracle Whip sounds strange but trust me, substituting mayo does not work for this one. In fact I had to buy a jar just to make this one.

The recipe follows:
Amish Macaroni Salad
1 lb Macaroni
1/4 cup Chopped Celery
1/2 cup chopped or grated carrot
1/2 cup chopped onion
1/2 cup chopped green bell pepper
6 hard boiled eggs ( 1 for garnish)
Paprika - also for garnish

Dressing
-----------
2 cups Miracle Whip
1/4 cup vinegar
3/4 cup sugar
2 tblspn yellow mustard
* Add 1 tspn salt or to taste
