Chicharrones are made of pigskin or sometimes pork belly. The pork belly has a lot more fat than the skin, so the chicharron tends to be a bit richer. Total cooking time and preparation time is between 2 hrs to 2 1/2 hrs.

Ingredients
7-10 Lbs Pig Fat, Pork Skin or Pork Belly
1/3 Cup Apple Cider or Regular Vinegar
1/2 Cup Water
Salt to Taste

I used approximately 7 lbs of pig fat, which gave me about five cups of chicharrones and three cups of lard.
