This salad is delightful! The little gem lettuces are so crisp and very pretty on their own. With the addition of sugar snap peas and thinly sliced radishes...there isn’t a better spring and summer salad out there!

A great time to make this salad is if you are hosting brunch, it would go great with quiche, or for a dinner party where you want to have a nice bright side with your main! If you want to make this salad a main dish, you could easily add some chopped up chicken or even some garbanzo for a vegetarian protein option!

🔪--------------------------------RECIPE--------------------------------🔪
Makes: 8 servings
Time: 20 minutes

✨INGREDIENTS
Salad Dressing
½ cup packed parsley leaves
½ cup packed dill fronds
¼ cup chopped chives
2 tablespoons water
1 tablespoon lemon juice
¼ cup greek yogurt
¼ cup extra virgin olive oil
2 teaspoons dijon mustard
¼ teaspoon salt
¼ teaspoon pepper

Salad
1 large watermelon radish, thinly sliced
1 bunch radishes, thinly sliced
10 cups little gem lettuce, leaves separated (about 8 heads)
2 cups chopped sugar snap peas
Flake salt and pepper to taste


✨INSTRUCTIONS
Salad Dressing
Place herbs, water and lemon juice into a food processor.

Pulse until the herbs are finely chopped.

Add remaining ingredients and pulse to combine. Season to taste.

Chill until ready to serve.

Salad
Place radishes into a bowl of ice water and allow to chill until radishes are crisp, about 15 minutes.

Place desired amount of salad dressing into a large bowl (I like to use about half of the dressing and place the rest on the side in a small bowl).

Remove the radishes from the ice water and lightly dry them off with a dishtowel.

Add radishes, lettuce, and snap peas to the large bowl. Toss to coat, season with salt and pepper and serve immediately.
