This best wonton soup recipe is easy and very tasty. The video shows you how to make this delicious wonton noodle soup at home.
You can make only wonton soup or you can add noodles in it for a fuller meal. Wonton filling can be adjusted to your preference.
It can be pork wontons, chicken wontons, beef wontons, prawn wontons, tofu and vegetable wontons, or even kimchi wontons.
The possibility of the fillings is endless. To make wonton noodle soup, you need to prepare wonton wrappers and egg noodles.
These ingredients can be found in Asian groceries. Wontons can be stored in the freezer in an airtight container for up to one month.

Ingredients:


Wonton filling

Yield: about 22-24 wontons

1 pack wonton wrappers
200 grams minced pork
1/3 teaspoon salt
2 teaspoons soy sauce
3/4 teaspoons sugar
1/2 tablespoon sesame oil
1 teaspoon vegetable oil
1/2 tablespoon corn starch
1/4 teaspoon ground pepper, black or white
1 teaspoon garlic, finely chopped
1 teaspoon ginger, finely chopped
1 tablespoon water* (you can add a little water to loosen the filling a bit)

Garlic oil

1/4 cup red onion, finely diced
1/4 cup spring onion, sliced
1 tablespoon garlic
1/2 tablespoon ginger
1 tablespoon dried shrimps, chopped (optional)
1/3 cup vegetable oil

Noodle

1 serve egg noodles, dried or fresh

Soup

2 teaspoons homemade garlic oil
1 teaspoon chicken stock powder
2 teaspoon soy sauce
1 teaspoon fish sauce
1/3 teaspoon sugar
1 cup boiled water


Some sliced spring onion and coriander leaves for garnish.

Directions:

1. Chop garlic and ginger. Set aside.
2. Cut onion in half lengthwise and slice. Set aside.
3. In a bowl, add minced pork and all the seasonings for wonton filling. Mix well using chopsticks or a spoon.
4. Add about 1 1/2 teaspoon of pork filling in the middle of a wonton wrapper. Fold the wonton wrapper in half to form a rectangular.
Seal with water. Put one of the bottom corners on top of the other and press to stick them together. [See a video from Cook Bake and Enjoy channel 'Wonton Noodle Soup' for a demonstration of how to wrap wontons.]
5. Prepare ingredients for making garlic oil by chopping garlic, ginger and red onion finely. Then slice spring onion and chop dried shrimps.
6. Add oil in a pan and turn on a stove at low heat. When the oil is hot, add in garlic, ginger, red onion, and spring onion. When they have turned light brown or at about half way of frying, add dried shrimps and continue frying until they are brown, crispy and aromatic. Turn off the heat and remove garlic oil into a bowl. Set aside.
7. Add water about 2/3 in a medium size pot and put on the stove. Turn on medium heat. When the is boiled, add in egg noodles. When the noodles are just cooked and still a bit firm, remove them from boiled water and drain.
8. In the same pot with boiling water at medium heat, add 4-6 wontons and let them boil. When the water is boiling, add about 1/3 cup of cold water in. This is done to slow down the cooking process and make sure that the wonton wrappers and the meat are perfectly cooked. When the water is boiling the second time,
add another 1/3 cup of cold water in again. If the wontons are frozen, then you can repeat the process of adding in cold water into boiling water 3 times. Wontons are cooked when they are floating on the surface and the wrappers look translucent and soft but still hold shape and they are not breaking apart easily when touched.
9. In the same pot with simmering water, add bok choy and blanch it for about 20-30 seconds.
10. To assemble the dish, add garlic oil, all the seasonings for the soup, spring onion and coriander in a bowl. Then add about 1 cup of boiled water in. Mix well. Add in noodles, wontons, and bok choy. Sprinkle on top with some more spring onion and coriander leaves. Serve warm.

Tips:

1. When you make wontons in a big batch and would like to store them in the freezer, put wontons in an airtight container side by side. Do not overlap. Put a plastic wrap sheet between the layers to prevent wontons from sticking together.
2. You can omit dried shrimps in the garlic oil. Dried shrimps give specific umami taste to the soup.
