Today we are mixing up a quick weeknight dinner that is easy, nutritious, and has lots of veggies in it: Beef Bok Choy. I was very flavorful and had the crunch of the Bok Choy with the flavorful beef, onions and garlic, with the chili garlic crisp oil for added flavor. I think the total cook time was no more than 15 minutes, and maybe 5 minutes of prep on the veggies, for a total of maybe 20 minutes. With lots of veggies, and the protein from the beef, I’m thinking it was a pretty nutritious meal as well, for a very quick and easy dinner.
