This recipe is called Boulangere, a French version of Scalloped Potatoes. It is a lighter and tastier option for Thanksgiving.

Ingredients:

- Potatoes (preferably Yukon Gold)
- Fresh Rosemary
- Fresh Oregano
- Garlic Cloves
- Salt and Pepper
- Butter
- Veggie or Chicken Stock

Instructions:

1. Peel the potatoes without washing/soaking them to preserve the starch.
2. Thinly slice the potatoes or use a mandolin for quicker results.
3. Chop fresh Rosemary and Oregano.
4. Thinly slice the desired amount of Garlic Cloves.
5. Layer the potatoes in an oven-safe dish.
6. Add a small amount of Salt, Pepper, Rosemary, Oregano, Garlic, and a knob of butter.
7. Repeat the layering process for 3-4 more layers.
8. For the top layer, arrange equal-sized rings of potatoes for presentation and add a large knob of butter on top.
9. Fill the dish with Veggie or Chicken Stock, slightly below the top line of the potatoes, ensuring the top remains exposed.
10. Cover the dish with a lid and place it in a preheated oven at 450ºF for 20 minutes.
11. Remove the lid, reduce the oven temperature to 250ºF, and bake for an additional 40 minutes.
12. Once cooked, remove from the oven and it is ready to serve.
