INGREDIENTS (6 servings)
- 3 potatoes (about 500 g total - 1 lb 1¾ oz)
- 1 onion
- Salt to taste
- Ground black pepper to taste
- 1 tablespoon olive oil
- 1 egg
- 2 rectangular puff pastry sheets (about 230 g each - 8 oz each)
- 500 g Fontina cheese or similar cheese, cut into slices (1 lb 1¾ oz)

INSTRUCTIONS:
Peel and grate the potatoes. Add them into a pot. Peel an onion and slice it thin. Add the onion to the pot with the potatoes. Pour in a tablespoon of olive oil and season with salt and pepper. Cook over medium-high heat for 10 minutes until creamy.
Preheat your oven to 180°C (355°F). Lay slices of cheese on a puff pastry sheet. Spoon the potato and onion mixture on top. Cover with a second puff pastry sheet and seal the edges by folding then crushing with a fork.
Use a knife to cut the top into 6 rectangles. Beat an egg and brush it over the surfaces. Put on a baking sheet and bake for 15 minutes until golden brown.
