Winter hiking is a lot of fun. It's even more fun when you can enjoy a hot meal cooked over a fire when you get to your destination. Join me as we learn how to cook on a Firebox sometimes referred to as a Twig Stove.
Todays outdoor adventure takes us on a relaxing solo hike to explore a rapidly flooding river in the shadow of Mount Rainier. Solo backpacking in the PNW is like no other place. A trail can completely change from one day to the next depending on the weather so you need to be prepared for whatever nature throughs at you.

Join me as I slog through the mud, cross flooding rivers, and bushwack my way to an isolated camping destination along the Green River. Then the real fun begins.
Firebox Cooking, here we come!
Today I'm making my own twist on a traditional Filipino meal, Pancit.
Jeremy's version of Pancit recipe:
Rice Noodles ( 1/2 package)
Diced Cabbage (1 oz)
Chopped Kale (1 oz)
Diced Brussel Sprouts (2 )
Thin Sliced Carrots (2 baby carrots)
Diced Onion (1/2 small yellow onion)
Diced Garlic (1 small clove)
Bavarian Dried Sausage (1 oz)

Pancit Sauce:
Soy Sauce (1 oz)
Hoisin or Oyster Sauce (1/2 oz)
Red Pepper Flakes ( season to taste)

All ingredients are safe to pack in any temperature and will easily last up to 4 days even on the hottest of days. Pro Tip: To keep your veggies fresh for up to 4-5 days, pack them whole and chop them only when you're ready to eat. Keeping stems on your veggies will greatly extent their freshness.
