There is homemade bread than there is homemade bread that's worthy of a bakery. For years I've put much efforts in trying and testing multiple bread recipes. This one is based on Tartine's recipe, but I've tweaked it:
1) to make it even easier
2) to allow the use of sourdough OR regular instant yeast.
You will need a cast-iron, enamel or ceramic dutch oven and a scale. More than 300 breads later, I still can't believe how great the bread is everytime I open my cocotte. Go ahead, try it, you will see!
