This week I'm showing you how to make something you may have never thought of cooking, or even heard of, a Skate Wing. A skate is a fish, related to sharks but more resembles it's cousin, the stingray. It's meat is actually flaky and I've cooked it several different ways in the restaurant this week, but today I'm showing you how to panko fry it, along with an heirloom tomato stack with ratatouille vegetables.
