Today I made a very moist and delicious chocolate cake without adding flour.
AKA, gluten-free chocolate cake.

What cake can the whole family enjoy on Christmas?
After thinking about it, I came to the conclusion that it was “chocolate cake”.
It may not have a flashy design, but I am confident that the taste will be the best.
We will give even those who cannot eat flour the right to eat delicious cake.

To make a delicious cake, you need to follow a few steps.

It is a cake that has no likes or dislikes and is perfect for a gathering with the whole family.
If you leave it out on the table for about an hour, it will have a more pleasant texture.
To create a richer chocolate flavor, I used chocolate syrup and it had a better taste and aroma.
Although the name is chocolate syrup, it is not sweeter than other syrups.
It has a very deep flavor and is not too sweet.

● Flourless chocolate cake
(Mold size: 15cm (diameter))

60g almond powder (100%Almond)
13 g corn starch
15g cocoa powder (1/3 cup)
1/2 tsp baking powder

3 yolks (54g)
15g sugar
3ml Vanilla extract
a pinch of salt
15g Honey (can replace starch syrup or glucose)

3 egg whites (105g)
3ml lemon juice –( optional)
70g sugar

28g milk
15 g unsalted butter


● Chocolate Syrup
30g sugar (2 Tbsp + 2 tsp)
4 g cocoa powder (2 tsp)
50 g hot water
5ml Rum (1 tsp)


● Chocolate Butter Cream Frosting

3 egg whites (105g)
140 g sugar (1/2 cup + 3 Tbsp)
a pinch of salt
5ml Vanilla extract
230 g unsalted butter

110 g dark chocolate (2/3 cup)
12 g cocoa powder (2 Tbsp)

60 g sugar (4 Tbsp + 2 tsp)
90g starch syrup (1/2 cup + 1 tsp)
50 g sweetened condensed milk (3 Tbsp + 1 tsp)

7 g (1 Tbsp) powdered gelatin
+ 35g water)

95 g dark chocolate (1/2 cup + 1 Tbsp)

What is gluten?
It is a by-product generated when making wheat starch and is a water-insoluble protein, which is a unique property of wheat flour.
Gluten is difficult to digest and may cause gluten intolerance.

Wheat flour contains about 70% carbohydrates and 10% protein.
Among these proteins, there are gliadin and glutenin, which account for about 80%.
When kneaded with water, gliadin and glutenin combine to form a network structure.
This is the chewy gluten we love.

Among modern people who enjoy processed wheat foods such as bread, cookies, noodles, and fried foods, many people suffer from gluten-sensitive intestinal diseases such as indigestion due to gluten, an insoluble protein contained in wheat.

Intolerance is a reaction in which our body cannot absorb nutrients and rejects them when nutrients enter the body. Symptoms of gluten intolerance, which is a typical example, include digestive dysfunction such as abdominal distension and abdominal pain.

Gluten-sensitive intestinal disease is a condition caused by the absence or lack of an enzyme that digests gluten. When a person who cannot digest gluten consumes it, the intestines are stimulated and the projections of the intestinal mucosa atrophy, making it impossible to absorb nutrients.
Therefore, people suffering from gluten-sensitive bowel disease experience the inconvenience of having to control their diet for the rest of their lives.

In countries like Korea and Japan, where I live, there are not many cases of celiac disease, but in the United States, where wheat is the staple food, 1% of the population is said to have celiac disease, so many people cannot eat wheat. There are cases.

So today, I made a gluten-free chocolate cake to enjoy a delicious chocolate cake without flour.
