Goat cheese is delicious, and it's even better when the goats are happy and taken care of with kindness! Gale at Caromont Farm started making small-batch goat cheese in Virginia after spending years in the restaurant industry and then studying cheese-making in Vermont. On my visit, she stressed the importance of having goats who are happy and understand that humans and human touch aren't something to fear. She trains each year's new goats, milking them by hand to teach them not to be afraid of the milking process! Then she creates some of the most delicious goat cheese you'll ever try in all sorts of styles: soft, aged hard, funky, and gooey.
