INGREDIENTS + NOTES

#1 Tiktok Yogurt Bowl

2 handfuls frozen berries, i used strawberry
1 serving plain vegan yogurt
1 tbsp vanilla protein powder, or to taste
sprinkle of chia seeds
drizzle of maple, rice, agave syrup
1 banana for the top

#3 Improv Noodles

2 spring onions, divide the green and white parts
1 bell pepper
oil for the pan
chili flakes, to taste
2 heaping tbsp vegan spread of choice (or hummus)
â…“ cup (80ml) water, or more if needed
½ can chickpeas
1 tsp white wine vinegar
salt, pepper to taste
roasted sesame seeds, to tast
1-2 servings of wholewheat mie noodles


#4 Favorite Green Smoothie

1 green apple
1-2 handfuls baby spinach
1 banana
1 handful ice
½ cup (125ml) orange juice
1-2 tbsp vanilla protein
water, if needed


#5 Tofu Spinach Rice Bowl

1 block (200g = 7oz) firm tofu
1 tbsp cornstarch
lil oil for the non-stick pan, for the tofu
1 handful frozen parsley, chopped
1 tbsp vegan worcestershire sauce
2-3 cloves garlic
1 tbsp olive oil
100g baby spinach
salt, sesame for the top
vegan chili mayo
2 servings cooked rice

#6 Chocolate Chip Banana Baked Oats

½ cup oats (50g)
1 heaping tbsp vanilla protein powder
pinch of salt
pinch of cinnamon
1 tsp corn starch
1 small banana
ÂĽ cup + 1 tbsp water (70ml)
ÂĽ tsp baking powder
1 tbsp thick soy yogurt
lil bit of coconut oil for greasing
1 handful chocolate chunks
sprinkle of coarse sea salt for serving


#7 Tomato Soup w Grilled Cheese

for the soup:

1 bell pepper
1 tbsp olive oil, roughly chopped
200g - 300g ripe tomatoes, roughly chopped (7oz - 10.6oz)
2-3 cloves garlic
spices to taste (chili flakes, dried italian herbs, pepper…)
1 splash white wine vinegar or balsamic vinegar
1 tsp agave syrup
optional: 1 splash white wine or rosé
1 handful cashews
ÂĽ cup (60ml) water, more if needed

for the grilled cheese:

2 thick slices sourdough bread
vegan butter
vegan cheese (one that melts)
