This beautiful steak is the grass fed, grass finished tomahawk ribeye from Certified Piedmontese Beef ( https://bit.ly/3MrKNWF). It comes perfectly trimmed and just about read to rock n' roll! All we need to do is dry it off with some paper towel and season it.

Today we are using olive oil as a binder and seasoning it with one of my favorite steak rubs, and that's the Bearded Butchers Brock Lesnar rub ( https://bit.ly/4160vfi ). This is a thick cut of beef so you can go a tad more with the seasoning. Once its seasoned, give it a few minutes to sweat while you get the smoker going.

Now we are NOT going to reverse sear today, we are going to sear first using the Camp Chef Sidekick griddle along with some South Chicago Packing Wagyu Beef Tallow ( https://amzn.to/3GTN0Z5 ). Sear on Med-MedHigh heat until you reach the desired crust, then put it on your pellet grill or smoker at 225F. Today I will be using my Camp Chef Woodwind Pro 36 with hickory pellets and hickory wood in the smoke box.

Monitor the temperature and pull it about 4-5F before your desired final temperature. Wrap tightly in saran wrap or foil for about 10min and you'll end up with a super juicy and delicious grass fed tomahawk steak!
