Have I been doing the steak salt dry brine all WRONG? I am beginning to think so, but to confirm I put my normal salt dry brine technique head to head with the Chudds BBQ salt and pepper hack shared in his "Texas Pitmaster Reveals All Brisket Secrets" video to see if the magic on brisket carries over well to something like these twin tomahawk ribeyes that we are going to reverse sear on the Kamado Joe Classic 3 using the SloRoller.
