Beer can chicken is such a simple thing to make! I love using my Camp Chef pellet grill for it too! Don't have a smoker? No problem as this recipe can be used for the oven and gas grills too!

I start out by drying the chicken with paper towel. Get as much moisture off the bird as possible. This helps make the skin crisp up. Use olive oil as a binder ( https://bit.ly/394H3Xw ) as this will help the rub stick as well as contribute to crispier skin. Season with you favorite rubs. Today I used the Meat Church Voodoo ( https://amzn.to/3sXiWBH ) and Meat Church Fajita ( https://amzn.to/31T1zpT ).

For the beer can part... Use a liquid of your choice, but beer works really great! I empty (or drink) half the can and place a few teaspoons of an herb based rub into the can. Place the cans into the holder and put the chickens onto the stand.

This is the most important step!!!! Cut a potato or and onion into a wedge and tightly plug the neck of the chicken! This is what ensures that the moisture gets locked in and forced into the meat!

Today I am going to use my NEW Camp Chef SmokePro SG30 Wifi. For these chickens I like to apply a period of heavier smoke, so I set my pellet smoker smoker to 225F and smoke level 10 for 1 hour... then I bump the temperature up to 325F and let it rid until the chicken is 165F internal temperature in the breast.

As you can see this recipe is perfect! Look at the finish on those birds..... and look at that juicy chicken breast!!!!
