In this video I review Helen Chen's Asian Kitchen flat carbon steel bottom cooking wok and compare it to the popular Taylor and Ng woks.

I also discuss the differences between carbon steel, cast iron, and stainless steel and how to properly clean and season a carbon steel wok which applies to all carbon steel and cast iron cookware.

To clarify, you can use a carbon steel flat bottom wok on almost any stove top just as you would with any regular flat bottom skillets. This includes gas, electric, and induction stoves.

A round bottom wok will not make good contact on electric or induction stoves and must be used with the included ring for gas stoves.

So if you have a gas or induction stove, you must buy a flat bottom wok. Almost all the popular brands including the ones feature in this video, offer both options.
