Ingredients:
2 -3 medium sweet potatoes
1 onion
8oz of white mushrooms
5 cloves of garlic
2 cups of kale
1/2 cup of frozen Edamame
1 tbsp of nutritional yeast
Salt, black pepper, smoked paprika, cumin, chili powder and crushed red pepper to taste
1/2 cup of vegetable broth
To make sauce
1 can of diced tomatoes
1/4 cup of roasted red pepper
1/2 of lime
Directions:
Use a slicer or a grater to create short noodles from sweet potatoes. Put aside!
In the meantime, cut onions, mushrooms and garlic into a small pieces. Place in a pan and add broth. Cook until soft and water evaporates from the mushrooms.
Add sweet potatoes, spice, salt and tomato sauce. Cook for 10 minutes.
Incorporate Edamame and kale and cook for another 5 minutes. Turn the heat off and add nutritional yeast into your mixture. Stir your ingredients well.
