INGREDIENTS
2 & 1/2 oz. freshly grated Colby Jack Cheese
6 corn tortillas (bite size pieces)
1 poblano pepper (roasted, seeded & diced)
1 jalapeno (seeded & diced)
1 large roma tomato (diced)
1/4 C. chopped onions
pepper (to you liking)
salt (to your liking)
cilantro (small bunch chopped)
3 jumbo eggs
1/4 C. veg oil
