Caesar dressing
Egg yolks 2
Lemons 50ml
Dijon mustard 50g
Anchovies 6
Garlic 1 clove minced
Parmesan 40g
Olive oil 50ml
Veg oil 250ml
Water 100ml approx.
Salt and pepper to taste
Place all ingredients apart from the oil in the food processor, turn on.
Slowly add the oil (as if making a mayonnaise, add slowly at first then speed up. Add water until desired consistency (coating).
Check seasoning.
