Having friends over for breakfast or brunch? Here's a very creative recipe you could serve and to add to your breakfast menu. Cut those peppers in rings and fill them up with eggs, cheese and bacon. (Save the other parts of the pepper for stir fry, salad, soup or stew to limit food waste)
Cook them however you want it- easy, over easy or well done. I like my eggs well done, how about you?
