SHEPHERD'S PIE, COTTAGE PIE, HACHIS PARMENTIER are made with minced meat topped with creamy mashed potatoes!! A perfectly delicious MEAL!! Easy to make, yet so satisfying!! Recipe below..

SHEPHERD'S PIE

Preheat oven to 400 degrees F.
Lightly grease a 9" deep dish pie pan or 9"X9" baking dish. Set aside.

1 Pound ground (Chuck) Beef, or ground Lamb

1 cup onions (medium-size), chopped

2 garlic cloves, minced

1 tablespoons olive oil

1/2 teaspoon salt

1/2 teaspoon black pepper

1/2-1 teaspoon dried thyme

1 tablespoon tomato paste

2 tablespoons all-purpose flour

1 cup beef broth

1/2 cup fresh carrots, diced

1/2 cup frozen or fresh peas

1/2 cup frozen corn

TOPPING

1 (20 OZ) 1 LB package of already made MASHED POTATOES

2 tablespoon whipping cream or substitute with milk

1 large egg, beaten

1- 2 tablespoon thinly sliced green onions for garnish, optional

1. In a 12" skillet, over medium-heat, add olive oil. Add meat, salt, pepper, and thyme. Cook while crumbling with wooden spoon until a small amount of pink is showing on the meat, about 2-3 minutes. Add onions, cook an additional 2 minutes.

2. Add carrots, garlic, and tomato paste. Cook 2 minutes.

3. Stir in flour. Cook for 1-2 minutes. Add beef broth. Stir until mixture comes to a gentle boil and has slightly thickened, about 1 minute.

4. Add peas and corn. Stir until well blended.

5. Transfer meat filling into prepared baking dish. Evenly spread out filling.

6. TOPPING: Add already made mashed potatoes, cream, and egg into a 2-quart sauce pan. Stir until well bended, oven medium-heat, until creamy and warm. Gently spread evenly over the top of meat filling.

7. Place onto baking sheet with sides. Bake for 30-35 minutes or until bubbly around edges of Pie.

8. Immediately top with green onions after removing from oven. Cool for 15-20 before serving.

TIPS: Store in airtight container up to 1 day in the refrigerator. Heat in microwave for 20 seconds, at a time, until desired warmness.
