Teriyaki Chicken Bites with A Mighty CRUNCH!

These crispy chicken bites will remain crunchy, even with sauce added. Don’t let them sit in the sauce for too long, or they will soften. The ingredients are: 1/2 cup of soy sauce, 1/4 cup white cooking wine, 1/3 cup water, minced ginger and garlic-2 teaspoons each, 6 Tablespoons of brown sugar, 1/4 cup rice vinegar, 1 Tablespoon Sesame oil, 2 Tablespoons of honey. Mix all ingredients well. Pour this in a saucepan, simmer 7 minutes. Add cornstarch slurry (2 teaspoons cornstarch, enough water to make a loose paste) after 7 minutes if the sauce hasn’t thickened. Also add sesame seeds while the sauce is thickening. To season your chicken bites, use your favorites, or just do the basics (seasoning salt, pepper, Paprika, onion and garlic powder). I also use these same seasonings for my flour, and be generous. Before you put your seasoned chicken in the flour, add 1/2 cup of cornstarch and 1 egg to the chicken, and mix this well. The chicken will be very sticky, now it’s ready to be put in the bag of flour. Heat up your Canola oil to 350, and fry your chicken for 5 minutes. Drain your chicken on a cooling rack, to maintain that fantastic crunchy texture. Now that your sauce is thickened, drizzle this over your chicken. Less sauce means crunchier chicken. You can eat this by itself, over steamed white rice, or with fried rice. ENJOY!
