This garlic ginger coconut shrimp dish, with lime and honey is incredible!
I have this recipe on repeat, because it's so easy, healthy, made in only one skillet and ready in 20 minutes.

INGREDIENTS

AVOCADO MANGO SALSA
1 mango, diced
1/2 avocado, diced
1 jalapeño, seeded and chopped
1/2 cup cilantro, chopped
juice of 1 lime
1 tbsp extra virgin olive oil
1/2 tsp salt

SHRIMP
300 g jumbo shrimp, peeled and deveined
1/2 tsp salt
1/4 tsp ground black pepper
1/4 tsp cayenne pepper
1 tbsp extra virgin olive oil
4 garlic cloves, minced
1 tbsp fresh ginger, grated
3 tbsp salted butter
1 cup caned coconut milk
2 tbsp low sodium soy sauce
1 tbsp honey
zest and juice of 1 lime
1/2 cup cilantro, chopped
