Ingredients:
1 tbsp olive oil
1/2 cup diced onion
1 tsp minced garlic
2 lbs ground beef
1 tsp dried oregano
1/4 tsp red pepper flakes
1/2 cup tomato paste
3/4 tsp salt
3/4 tsp ground black pepper
1/2 cup beef broth
1/2 cup frozen mixed veggies
2 lbs Japanese Sweet Potatoes *
2 tbsp butter **
1/4 tsp salt
1/4 tsp ground black pepper
1/4 cup milk (at room temperature)
A handful of double cheddar cheese
1 tsp Smoked Paprika Powder

Bake at 375F for 30 minutes and Broil for 3-5 minutes.


*Japanese Sweet Potatoes are thicker , drier , firmer and starchier types of sweet potatoes. They are a little more like a regular baking potato than a standard orange sweet potato. I prefer using Japanese Sweet Potatoes for my Shepherd’s Pie as they have a very nutty flavor and they are more starchy than the other variety of sweet potatoes. Having said that, I don’t need to add flour anymore to the ground beef as the starchy components of the Japanese Sweet Potatoes will thicken the beef & veggies mix as it bakes in the oven.
If you prefer to use the regular orange sweet potato in this recipe, don’t forget to add a tablespoon of flour as you cook your beef & veggies.

** When you use Salted butter, you don’t need to add 3/4 tsp of salt to the mashed sweet potatoes anymore.

I used Potato Ricer as shown in the video, but feel free to just mash it with a fork or your potato masher. It does not have to be mashed finely as the sweet potatoes will still cook and thickens as it bakes.

If you love Sweet Potatoes, use it as an alternative for regular potato when making your favorite Shepherd’s Pie. It’s high in fiber, beta-carotene and anti-oxidants.
