One of my favorite soups growing up was called Kuay Teaw Nua (Beef Noodle Soup in Thai), we didn't get it a whole lot, cause it requires a long cook time. Time wasn't always something we had a lot of... we kept Mama running & busy. When I got older I discovered that Vietnamese made a soup with the same flavors called Pho. The flavor profile is almost identical. In my 30's I started making my own & refining the flavor to fit my taste buds. This is one of those dishes that if you ask 10 different people how they make it, you'll get 10 different (but similar) recipes. I get asked all the time how I make Pho. It's easier than you might think. It just needs time to simmer and develope those flavor, and most importantly pull minerals and collegan from the bones adding health values to the soup. This is how I make my version of Pho or as I call it Kuay Teaw Nua.
