Granitos is a rice fritter that is mostly known by people of the town of Humacao, where Yomarie grew up. The fritter contains very few ingredients: rice, water, salt, fat and cheese. However, it turns into the perfect combination of crispy rice with a hint of cheese. This rice fritter was sold in the mornings in pushcarts located throughout the whole town. In the 90s, you would get 5 granitos for $1. The challenge was sharing those 5 amongst the whole family in the car or trying not to touch your notebooks once you got to school with your hands a bit greasy from the delicious fritter. Even if you grew up in Puerto Rico, it is likely that you have never heard of granitos but believe us, once you try it, you won't forget it!

Ingredients:
2 cups water
1 ½ cups medium grain rice
1 tbs butter
1 tsp salt
Gouda cheese
